Ingredients
For the crumb mixture
- 1 cup cold butter, cut into ½-inch pieces
- 1 cup packed brown sugar
- 2 cups fruit and nut granola
- 1½ cups flour
- 1 teaspoon baking soda
For the yogurt filling
- 1 cup Greek yogurt
- 1 teaspoon lemon juice
- 2 tablespoons flour
- ⅔ cup sugar
- ½ cup chopped toasted pecans
- ½ teaspoon vanilla extract
- 1 tablespoon bourbon whiskey
- ½ teaspoon cinnamon
- 1 egg
- 3 large tart apples, peeled, cored and finely diced
How to Make Apple Yogurt Granola Crumb
1. Prepare the crumb mixture
Add the cold butter, brown sugar, granola and 1½ cups flour to a food processor. Pulse until the ingredients begin to combine. You can also mix everything thoroughly in a bowl or using a stand mixer.
Add the baking soda and pulse or mix until a crumbly mixture forms.
2. Prepare the crust
Press half of the crumb mixture into a 10-inch pie dish, covering the bottom and pressing it up the sides to form a shell.
Bake the crust for 10 minutes.
3. Chill the remaining crumbs
While the crust is baking, place the remaining crumb mixture in the refrigerator. This will be used as the topping.
4. Prepare the yogurt filling
In a bowl, combine the Greek yogurt, lemon juice, 2 tablespoons flour, sugar and toasted pecans.
Add the vanilla, bourbon whiskey, cinnamon and egg, then mix until the filling is well combined. Fold in the diced apples.
Remove the baked crust from the oven and allow it to cool for about 10 minutes. Pour the apple-yogurt filling into the crust.
Bake for 30 minutes.
5. Add the crumb topping
Remove the pie from the oven and sprinkle the chilled crumb mixture evenly over the top.
Return the pie to the oven and bake for another 20 minutes, or until the topping is golden and the filling is set.
Allow the Apple Yogurt Granola Crumb to rest for at least 30 minutes before slicing and serving.
Serving Tip
Serve the dessert slightly warm or at room temperature. A spoonful of Greek yogurt or a scoop of vanilla ice cream can be served alongside it for an extra creamy finish.
