  • 2 cups sprouted matki (boiled until tender)
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 green chilli, finely chopped
  • 2 tbsp fresh coriander, chopped
  • 1 tbsp tamarind chutney
  • 1 tsp green chutney
  • ½ tsp roasted cumin powder
  • ½ tsp chaat masala
  • Salt to taste
  • Juice of ½ lemon
  • 2 tbsp nylon sev (for garnish)

How to Make Pune-Style Matki Bhel

Step 1: Boil the sprouted matki until tender but firm. Drain excess water and let it cool slightly.

Step 2: In a large bowl, combine the matki with chopped onion, tomato, green chilli and coriander.

Step 3: Add tamarind chutney, green chutney, roasted cumin powder, chaat masala and salt. Mix well.

Step 4: Squeeze fresh lemon juice over the mixture and gently toss until evenly combined.

Step 5: Just before serving, top generously with nylon sev and extra coriander. Serve immediately to enjoy the perfect balance of freshness and crunch.
