Leftover rusks don’t have to end up in the bin. With a few everyday ingredients, they can be transformed into a rich, creamy no-churn ice cream that’s perfect for summer and a smart way to reduce food waste.
Rusks bring a lightly toasted flavour and a unique texture that sits between cake and biscuits. When combined with full-fat milk, fresh cream and sweetened condensed milk, they create a smooth frozen dessert without the need for an ice cream maker.
The recipe is highly adaptable. Cardamom can be added for a traditional flavour, while cocoa powder or instant coffee creates chocolate or mocha variations. Chopped nuts, chocolate chips or fruit purees such as mango, strawberry or blueberry can also be mixed in for extra taste and texture.
Ingredients
10-12 rusks
500ml full-fat milk
200ml chilled fresh cream
200g sweetened condensed milk
2-3 tbsp sugar (adjust to taste)
1 tsp vanilla extract
¼ tsp cardamom powder (optional)
3 tbsp chopped almonds, pistachios and cashews
2 tbsp chocolate chips (optional)
Method
Start by crushing the rusks into coarse crumbs using a food processor or mixer. Heat the milk over low heat until it reduces slightly, then stir in the sugar until dissolved. Allow the milk to cool completely before whisking in the condensed milk, fresh cream and vanilla extract.
Fold in the crushed rusks, cardamom, nuts and chocolate chips before transferring the mixture to a freezer-safe container. Freeze for two hours, then stir thoroughly to break up ice crystals. Return it to the freezer for another four to six hours until firm.
Serve with honey, chocolate or caramel sauce, and garnish with crushed rusks, chopped pistachios or fresh mint for added flavour.
Tips for Creamier Ice Cream
Use full-fat milk and well-chilled cream for the best texture. Reducing the milk before mixing gives the dessert a richer taste. If the rusks are already sweet, reduce the added sugar.
For variations, mix in dissolved instant coffee for a mocha flavour, cocoa powder for chocolate ice cream, or swirl in fruit puree after the first freeze for a fruity twist. A pinch of cinnamon or nutmeg also complements the toasted flavour of rusks.
